It’s all about loyalty, Terzian tells Harper’s Bazaar. “We have a Rolodex of approved people that can call or email in and are allowed to make a reservation anytime; it took a while for people to figure that out, but it's about consistency – a ton of our people eat there three times a week," he continues.
