The team behind Pubbelly strikes again in the newly opened Langford Hotel with the unveiling of PB Station, an elevated take on American fare with the occasional unexpected quirk. Chef and founding partner José Mendín drives the menu with inventive takes on classics, from parmesan truffle cream-topped Wagyu beef tartare sliders and pan-seared Loch Duarte salad with grapefruit and hearts of palm to saffron linguine and a deeply savory burger with bacon confit and smoked Bordelaise. As if that’s not exciting in itself, the Pubbelly boys have also commandeered their very first hotel bar, Pawn Broker, on the property’s rooftop, serving up concoctions like Cracker Jack-infused whiskey and a bevy of wines and local craft beers.
